This is my recipe that I sent in and use when I make mac salad. The only thing is someone changed the way to do the mac. Don't boil it for 8-10 minutes. Get water boiling, put in mac, bring back to a boil, stir, turn off heat. Leave covered for 10 minutes then drain and make salad. That is what the recipe calls to do.
well....yummy! i havnt made mac salad in prob 15 yrs and was lookin for a refresher...wow!!! i did make a few changes based on pref and what i had in my stock....first thing, which i used to do back in the day....1/2 mayo and half miracle whip...which is prob why the sugar amt wasnt disagreeable. i used chopped green and black olives, reduced the chopped onion a bit and sprinkled chopped green onions in as well. grated a big fatty carrot into it and used two large grated pickles in place of the relish...oh! and didnt have enough elbow mac so added spiral to make up the difference....again, wow!!!! cant wait for my man, who asked me to make some, to get home from work and check it out! pretty convinced he is still gonna think im the best cook on the planet!!! oh!!! and wish i could ship some to my grandson down in mississippi!!! he would go nuts over it!!! def thumbs up from one discerning cook who doesnt even own a recipe....
I'm so happy I stumbled upon this recipe. It truly is a great macaroni salad. Most of the ingredients, by themselves, I don't care for, but mixed into this salad, the flavors are so complimentary. Per other reviews, I only used 1/4 cup sugar and that was plenty especially when using a dressing which I completely recommend over regular mayo, plus it's much healthier. The salad smells like eggs although they don't overwhelm the recipe. Each ingredient has a subtle flavor that comes out in every bite. The dill pickle relish is a great addition and really boosted the flavor. I added half of the dressing mixture to the macaroni, let sit overnight then added about half of the remaining. Essentially, you really only need about 3/4 of the dressing, but then again, to each his own. Thanks for the recipe! This is definitely a keeper!
I loved this recipe.. I also cut back on the amount of sugar. But it turned out great. Definitely my new favorite mac salad recipe
I served this at a cookout and it was a HUGE hit. It was the exact taste I was going for and the best macaroni salad I've ever had! I was worried about not having enough for the 15 people coming so I doubled the recipe (since it says it serves 6). Doubling the recipe made a ton of the salad and we had quite a bit left over. I'm not sure how big of a serving it was indicating, but one batch of this recipe surely feeds more than 6 people. Also, based on everyone's comments, I cut down the sugar to 1/2 cup and it was great! I will definitely make this recipe again!!!!
Love this recipe. I don't like a lot of mayo in my macaroni salad so I reduced all the ingredients for the dressing in half. I also added 2 cans of tuna....it was delicious!!!
